Under 15 Minutes: Vegetable Omelette

In a rush, and haven't been to the shops lately? Here is the first of my EasyDairyFree Fifteen minutes or less meals: 


Diced pepper as well as a host of other vegetables could work in this dish. 

Ingredients
1 or 2 organic, free range eggs, beaten (depends on age an appetite!)
1 tbsp dairy free spread
Veggie ideas: Choose from finely diced pepper, mushrooms, pre-cooked broccoli, frozen peas or tinned sweetcorn, or use your imagination! 


Method
  1. Melt the dairy free spread in a small frying pan. 
  2. If the veg is not pre-cooked, then add now and soften in the frying pan. 
  3. Add the eggs and turn the omelette half way through to ensure it is thoroughly cooked through. 
  4. Cut into slices and serve as finger food.
You could also just make a plain omelette if your cupboards are really bare!
