Courgette, Apple and Turkey burgers

We took the dog for a long walk by the river today, and when we came back, T had these delicious turkey burgers with his lunch.

Delicious Courgette, apple and turkey "burgers"

This recipe works for both you and baby. They take about 30mins to make, and can be frozen once cooled.

The Dog out for a walk this morning

Ingredients

300g Higher welfare minced turkey
1/2 thick slice wholemeal bread, processed into crumbs.
1 medium apple, grated
1/2 courgette, grated.
1-2 tbsp organic rapeseed oil.

Just simple ingredients - nothing else added!

Method

1. Place the turkey mince and breadcrumbs in a large mixing bowl and add the grated apple and courgette.

2. Mix the ingredients with your hands so that you have a firm texture. (You may need to add more breadcrumbs to get to a decent consistency).

3. Again using your hands, roll small balls and flatten into a burger shape.

4. Shallow fry in the oil until cooked through, approximately 10mins on each side on a low heat.

Gently cook until browned on both sides

These are excellent, protein rich finger foods for a weaning baby. I'll probably be making a few extra when I go back to work as a healthy lunch for me too!
